In the shadow of the gin boom, it takes a strong USP for a bottle to stand out from the crowd. In this instalment of The Drinking Hour podcast, host David Kermode chats to Xavier Baker, co-founder of the B-Corp certified Isle of Wight Distillery, to find out how a mythical sea creature gave birth to a distillery that’s breaking boundaries when it comes to sustainability, from sourcing and production to the bottle itself.
Over the course of the episode, former brewer Baker tells the story of how he joined forces with winemaker Conrad Gauntlett in 2014 to branch out into spirits, and why the pair struck upon a coastal botanical, wild foraged rock samphire – known locally as ‘mermaid’s kiss’ – as their core ingredient for Mermaid Gin.
