An array of cocktail venues constitutes our list of new bars to visit this month, including a new haunt in Singapore from bartending royalty that delivers a delicious dose of Korea to the city’s CBD. London welcomes a new standalone bar in Soho that’s celebrating agave spirits in cocktail form, while New York gets a novelty-free spot that focuses on foundational cocktails in four different forms, as well as a Prohibition-inspired ‘secret’ bar. Outside of the Big Apple, an award-winning mixologist in Chicago opens their first ever solo project in the city’s West Town.

El Siete

El Siete

London, UK

The first branch of taco restaurant El Pastor in Soho opened with a basement level that became more like a bar once the food was finished, with tables put to one side as a DJ took to decks and cocktails flowed from a counter down one side of the room. The distinction between the restaurant’s two floors has now been formalised with the launch of El Siete, the name for the relaunched space downstairs, which has been refurbished and given a new drinks menu and dedicated entrance. The name, meaning ‘the seven’ in Spanish, is the theme behind the food and drinks, with the cocktail list split into seven Margaritas, seven agave-based cocktails and seven classics with a twist. Drinks include The 777 Margarita, served in a stainless steel flask to help keep it cold; three Spicy Margaritas, each offering a different level of heat and the Cantaloupo, a frozen melon Margarita served in a cantaloupe melon. There will also be seven mini tostadas to pick from if you want to soak up some of the alcohol.

BOP

Singapore

BOP, which stands for Bartenders of Pony, is a Korean cocktail bar from award-winning bartender Uno Jang, who is also the co-owner and creative director of the Jigger & Pony Group. Located in the Singapore’s CBD, BOP is Jang’s most personal venture yet thanks to drinks and snacks that act as homage to the way he grew up drinking in Korea. A dozen original cocktails incorporate various Korean touches including soju, rice nuruk, takju and buldak sauce; the BOP Martini, for example, is a mix of soju, gin, seaweed, takju and olive jangajji, while the K-Town Manhattan includes soju, and pine nut makgeolli along with bourbon, port, roasted pine nuts and vermouth. Offered with the 12 cocktails are 12 snacks with a Korean flavour, such as kimchi pork mandu (dumplings), tuna gimbap (rice rolls), fried chicken and a seafood pancake.

New York, US

New in Manhattan’s West Village is Kees, a cocktail bar from the team behind Please Don’t Tell in the East Village. The focus is on four different variations of the classics; the Martini, Spritz, Negroni, Highball, Collins, Sour, Manhattan and Old Fashioned are all available in a variety of forms with some eye-catching ingredients in the mix. The Vesper Martini, for example, incorporates Château d’Yquem, while the Spritz Royale includes Royal Tokaji and Dom Pérignon. The basement bar itself is warm and classic in design, with green velvet banquettes complemented by marble and brass surfaces – this is a polished place for cocktail lovers who want high-quality drinks without fuss or gimmicks.

Bar Bambi

Chicago, US

New for Chicago’s West Town, this cocktail bar from Katie Renshaw (pictured at the Bar Bambi counter), who was previously head bartender at Hawksmoor Chicago’s Beef & Liberty Bar, is built on a frequently changing menu of drinks that includes the classics, as well as original creations that call upon techniques such as clarification and fermentation. A short wine list focuses on women winemakers and chef Nicklus Byrns has created snacks for the bar that go beyond the ordinary; the plate of salmon crudo certainly trumps a bag of peanuts.

All but invisible from the outside, this new cocktail bar in the East Village leans into a Prohibition theme with wood panelling, leather chairs and old mirrors – and there’s only space for 26 people at a time. A list of eight cocktails is divided into forgotten and reimagined classics, including takes on a Between the Sheets, Old Fashioned and Espresso Martini. A version of a Bees Knees comes with the option of honey made in Manhattan, Brooklyn or Queens and the Old Fashioned used burnt butter-washed bourbon. A short menu of snacks is also served, including rarebit truffle cheese toast, chicken sliders, lamb skewers and scallop crudo.
