There are so few demi-secs around that it’s always a pleasure to taste a really well-made example. This has 33g/l residual sugar; the nose is earthy with hints of the hedgerow while the palate is intense and sweet but bolstered by excellent acidity, which creates a very agreeable contrast. Flavours of quince and caramel, cooked Bramley apple and muscovado sugar. Cattier: “If we’re going to do a demi-sec it has to be the best in the world.” Unusual and delicious.
