Launched by two Scottish entrepreneurs earlier this year, Cabal rum is matured in Scotland in ex-Pedro Ximénez Sherry casks. It brings together rums from Guatemala, Guyana, Trinidad, Panama and the Caribbean across a range of spirit styles from pot and column distillation. These have been aged in their countries of origin, before being blended and matured further in a sweet Sherry cask in Scotland. The result gives a big hit of Christmas cake, a nice note of nutmeg and some elements of heavily polished wood. The palate has cherry cola, vanilla and orange blossom notes, with a relaxed, smooth finish. A fine sipping blended rum.
