From spectacular Spanish in London to fine French in New York, these are the best new restaurants to visit this month

The race to declare summer over is run and now’s the time for new restaurants to open and fully establish themselves ahead of the busiest time of year for hospitality: December. Claude Bosi’s Bibendum may have been another high-profile restaurant closure in recent weeks but there are plenty of other big-name chefs embarking on new ventures in the UK in September, including Johnny Lake, Nieves Barragán, Masa Takayama and Rafael Cagali.

In addition to details on those new places, another gastropub has opened in west London that’s bang on trend, there’s a classic New York take on French dining with a wine list to match, and the team behind Brooklyn institution The Four Horsemen have opened a sister venue across the street focused on Italy. If you’re in Sydney, a hot new Chinese restaurant wants to change the perception of the country’s cuisine outside China – and is serving some of the world’s most prestigious wines to accompany the food.

Labombe

The dynamic duo behind two-Michelin-starred Bermondsey restaurant Trivet – chef Jonny Lake, and sommelier and IWSC judge Isa Bal (pictured centre-left and centre-right respectively) – are back with a new venture on Park Lane. Called Labombe by Trivet, the restaurant is housed within the five-star COMO Metropolitan hotel. The wine bar and bistro specialises in European wines and dishes designed for sharing: Bal has created a list of ‘extra special’ wines focusing on artisan European producers. Manning the stoves will be fellow Fat Duck alumnus Evan Moore, while the wine will be overseen by 2024’s UK Sommelier of the Year, Philipp Reinstaller, who comes by way of Mauro Colagreco at Raffles. On the food front, expect duck heart and cherry skewers; gurnard crudo with orange ponzu; and sweetbreads Grenobloise with capers and brown butter. LS

The Salusbury

Whether it’s one of the Cubitt House pubs, The Hero or The Pelican owned by Public House Group or influencer holy grail The Devonshire in Soho, a certain sort of upmarket boozer offering restaurant-quality food is currently captivating a vast swathe of Londoners. Those local to Queen’s Park now have a version on their doorsteps in the form of The Salusbury, which boasts Tarryn Bingle, who has previously worked at La Trompette and The Pem, as executive chef. The pub is split roughly 50:50, with a conventional bar area to the left as you enter and the dining room, which feels more like a separate restaurant, occupying the other half. Warm churros under a snow of Parmesan immediately take their place at the top of the international bar-snack charts and would be welcome in both halves of the pub, before dishes such as cured seabream with apricot and pickled jalapeño; and burrata with peach, hazelnut and fig leaf demonstrate the ambition for the food further down the menu. Roast cod with Jersey Royals, mussels, leeks and cider; and lamb with smoked potatoes, chard, lemon and caper are highlights from the mains, while a beautifully smooth custard tart is the dessert to order. Chateau Royale

From the team behind Libertine, a bistro that opened this time two years ago in the West Village, comes this more decadent ode to the history of French dining in New York. Instead of the shabby-chic aesthetic of their first venture, Chateau Royale ushers in white tablecloths, wood panelling, banquette seating and a taste of classic luxury with a menu that includes foie gras, snails, lobster thermidor, duck a l’orange, and black cod with beurre blanc and caviar. The wine list is extensive and exclusively French, with more than 20 different Champagnes to choose from and bottles from all of the key regions in France, including older vintages of the Bordeaux First Growths and Domaine de la Romanée-Conti, if you’re open to getting carried away. Having blazed a trail at Barrafina and her Michelin-starred solo venture Sabor in Soho, Spanish chef Nieves Barragán Mohacho has ventured east for her latest opening: Legado in Shoreditch. Meaning ‘legacy’ in Spanish, the venue will celebrate her homeland’s rich regional cuisine. Spread across a main restaurant, casual counter and an outdoor terrace called the Taberna serving tapas and pintxos, whole animal butchery will take place in-house. Expect lamb from Zamora, suckling pig from Segovia and jamón Ibérico from Extremadura. She’ll also be shining a light on seafood via smoked paprika prawns with Moscatel vinegar and confit lobster with chilli and garlic. The 150-bin wine list features gastronomic rosés, island wines, rare Sherries and various vintages of Muga’s renowned Prado Enea. LS

Masa Takayama

Revered Japanese chef Masa Takayama, who presides over the three Michelin-starred omakase restaurant Masa in New York, is bringing his sushi skills to London this autumn, where he will open Tobi Masa at the shiny new Chancery Rosewood in Mayfair’s Grosvenor Square. Masa’s London outpost will feature an omakase counter, a main dining room and a bar. The menu riffs on popular dishes from his NYC venture, such as Peking duck tacos, surimi masa pasta, and toro tartare – a decadent blend of finely chopped fatty tuna topped with caviar – alongside London exclusives. Tobi means ‘to fly’ and takes inspiration from the ten-foot eagle on top of the hotel, built by architect Eero Saarinen, which was once home to the US Embassy. LS

Marea

Rafael Cagali, the Brazilian-Italian chef behind the two Michelin-starred Da Terra in London’s Bethnal Green is opening a more casual sister site by the sea in Hove. Called Marea, the venue will be headed up by Da Terra’s former senior chef de partie, Ewan Waller. A joint venture with Cagali’s partner Charlie Lee, who will look after the front of house, the 38-cover site will serve a selection of small plates, mains and desserts inspired by the produce found in and around East Sussex. Meaning ‘tide’ in Italian, Marea will position itself between fine dining and Cagali’s more casual Elis in Bethnal Green. As you’d expect from a chef of Cagali’s calibre, he wants Marea to become a destination restaurant. LS

I Cavallini

New York, US

The Four Horsemen in Brooklyn has won a Michelin star, become internationally famous and taken credit for changing the face of natural wine forever since it opened in 2015. Given the success, the prospect of a second venture should excite New Yorkers and any wine-loving visitors to the city. I Cavallini is it, with the same treatment given to Italian food and wine following the team’s triumphant take on France for The Four Horsemen. Just over the road from its sister restaurant in Williamsburg, I Cavallini is serving refined Italian comfort food paired with off-the-beaten-track Italian wines. Dishes include bucatini with Pomodoro tomato and ricotta, and farfallone with Calabrian chilli butter and smoked pancetta, before mains such as roast chicken with cabbage and nduja; and tuna dressed with a chervil gremolata. New for the bigger second restaurant is a cocktail list featuring plenty of amaro (The Four Horsemen is wine only), complementing the Italian list from the now-experienced team. WM

Aram is a new cafe, deli and restaurant from Imad Alarnab, the founder of Imad’s Syrian Kitchen, opening at Somerset House. The menu incorporates influences from Syria, Turkey, Cyprus, Jordan and other parts of the eastern Mediterranean, so diners can expect roasted aubergine salad with chickpeas, confit red pepper, tahini dressing, pomegranate, parsley and dill; curried cauliflower with rocket, red chilli, parsley and black onion seeds; labneh, poached eggs, grilled sourdough, Aleppo chilli oil and crispy onions; and potato rosti with house cured sumac salmon, poached eggs and coriander oil. Initially open for breakfast and lunch, Aram will open its fourth room later in the year, which will be the only space available for booking; it will have its own entrance and a private bar, offering space for supper clubs and other events. Young’s Palace

‘Big’ Sam Young has opened his second restaurant in Sydney with partner Grace Chen after the success of hip, luxury bistro S’more. Young’s Palace is a celebration of Chinatowns around the world, so diners should expect classic Chinese dishes with Western-style twists or inventions inspired by Chinese cuisine, such as fried crab wantons; steamed scallops with ginger shallots and soy; sweet and sour pork; and salt and pepper squid. Young is famed for his love of luxury ingredients, so there may well be some specials available off-menu, and the wine list reflects this too: only this week, the restaurant sold its first bottle of Château Latour. Young is also passionate about moving on the perception of Chinese food as ‘cheap, fast and scrappy’; Young’s Palace looks like a restaurant to help in that effort. WM
