Made for M&S by a highly regarded producer in Marsala using ‘appassimento’, a technique that’s been developed over centuries. Majority Grillo, with some Catarratto, grapes are left to ripen for longer, with a portion put on wooden racks to dehydrate in the Mediterranean sun, intensifying the flavour.
