I did a double-take too: a sparkling Tokaji and wow, it’s good. Made in the traditional method from the region’s flagship grapes Furmint and Hárslevelű, this fizz is subtly off-dry with the honeyed apricot and candied orange peel notes you’d expect from a classic, sweet Tokaji. Light florals and a squeeze of lime lift it too. A quirky alternative to Crémant that’ll handle salty cheese and spice beautifully.
