What began in 1981 as a small wine and cider producer has grown into something far more ambitious: Cisco Brewers, Triple Eight Distillery and Nantucket Vineyard, three distinct yet connected brands united by craft and place. Today, the collective is celebrated for its laid-back, island-inspired atmosphere and uncompromising commitment to quality.  

Triple Eight Distillery was established in 2000 by experienced winemakers and brewers who approached whisky not with reverence for tradition alone but with curiosity about what it could become. From the beginning, they asked not only what whisky is but what it could be when techniques from winemaking and brewing are applied. That perspective has shaped everything they do. The process is a journey of exploration: selecting barley varietals for flavour over yield, experimenting with fermentation and yeast complexity, analysing casks with the same curiosity and care as a vintner studies vineyard plots. “For us, the joy lies in stewardship, guiding raw materials through time, climate and craft until they reveal their truest expression,” Bryan explains. “Each whisky becomes a living reflection of patience, nature and creativity. To share that evolution in a glass, and see it spark discovery for others, is deeply rewarding.” 

Nantucket’s unique location plays a vital role. The salt air, shifting seasons and constant humidity shape the spirit in ways that cannot be replicated elsewhere. Each cask is studied with rigour: toast profiles, extract levels, refill dynamics and finishing choices all add nuance to the final whisky. The distillery pushes convention, exploring techniques sometimes ignored in whisky such as extended fermentation, lees ageing and yeast-driven complexity. The result is a spirit that reflects both artistry and patience, elegance disguised as simplicity.
