Kavalan Distillery was founded from a dream: to create Taiwan’s first single malt whisky. King Car Group’s Founder Lee Tien-Tsai and Chairman Lee Yu-Ting had the vision, and since 2005, Kavalan has pioneered New World Whisky, proving that world-class spirits can thrive outside traditional regions. Located in Yilan, northeast Taiwan, the distillery has amassed nearly a thousand gold medals, including 17 of the industry’s highest honours.
Yilan’s unique environment defines the whisky. Pristine Snow Mountain water lends a creamy texture, whilst the subtropical climate and Siberian winter winds accelerate maturation and enrich aromas. Production is carried out entirely at the distillery, from milling, mashing and fermentation through to distillation, maturation and bottling. Selected yeast enhances the subtropical fruity aromas, and whiskies are matured in quality oak casks sourced worldwide, layering complexity on top of Kavalan’s fruit-forward DNA. The result is a signature smooth, creamy texture and vibrant subtropical fruit character: tropical notes of mango, pineapple, banana and green apple, complemented by the fragrance of native orchids.
For Head of R&D Zerose Yang, making whisky is about learning to enjoy and enjoying to learn. “From the very beginning, we embraced Taiwan’s subtropical climate and Yilan’s pristine water to create new-made spirits that reflect the character of our land,” he explains. “Each innovation, whether through customised processes or maturation in diverse oak casks, brings challenges but also incomparable joy when breakthroughs are achieved.”
