The Argentine chef, restaurateur and author is known for his signature style of live-fire cooking and has restaurants around the world, including a handful based on wineries – from Restaurant Francis Mallmann at Ch√Ęteau La Coste in Provence to Fuegos de Apalta at Chile’s Clos Apalta.
