John Hall Autreus Vita drinking hour

In episode 254 of The Drinking Hour, host David Kermode talks to John Hall, master distiller at IWSC trophy-winning gin producer Trevethan Distillery, about gin’s ‘golden ratio’, the concept behind Hall’s new gin Aureus Vita.

The conversation begins with Hall’s journey into spirits through a chemistry degree and an analytical approach to flavour in his twenties. The pair then discuss how to make a great gin, including the difference between ‘bathtub’ gin and London Dry gin and the process of iterative improvement. Hall recounts how Trevethan Distillery began and expanded, before giving his thoughts on the ‘gin boom’ and how the gin market is changing.

Hall then explains how Aureus Vita was created on the basis of a ‘golden ratio’ and what this means for production, including the development of his own propriety still. The episode ends with his method for making the perfect Gin & Tonic – and his chemistry knowledge means it may not be how you’re currently making yours.
