The white wines used to make this classic dry vermouth are aged for a time in oak casks, giving the end result a hint of nuttiness, a bit like a dry sherry. Light-bodied and herbal, with a touch of saltiness on the finish, it is unsurpassed in a Dry Martini. But a little glass of iced Noilly Prat Dry makes a good aperitif, too.
