Shibui matures this malt whisky for a minimum of a decade in a mixture of ex-bourbon, ex-sherry and new Mizunara Japanese oak casks. The result is a gorgeous floral nose of freshly ground barley, honeyed fruitcake and a flutter of sweet spices. On the palate, this is lusciously smooth. There’s buttery, vanilla caramel, rich dates, pear chutney and a building, mouth-filling texture. Outstanding complexity with a balanced, lengthy finish.
