The most delicate of extractive techniques, with no ‘pumping over’ (remontage) or even pushing down (pigeage), and a resulting blend (47% Cabernet Sauvignon, 43% Merlot and 10% Cabernet Franc) which has effortlessly distilled the essence of great St Emilion; succulent, charming and entirely seductive.
