Barbadillo, Amontillado de la Bota de San Tomas

This is a single private cask Amontillado. Deep copper colour. Luscious almost botrytis nose, concentrated and nutty but with sweet bright fruit at the top of the nose. This is the most powerful of the lineup – really dominant rancio mid-palate with acidity driving through with tremendous force. This is what Beltran Domecq means by the “brutal glamour” of fine old sherries. It explodes in the mouth with saline, marinated nut (imagine green young walnut marinated in Cognac). It’s uncompromising: the intensity of the salinity, the lip-smacking texture, the pungency of palate. It all adds up to something otherwordly. Magnificent.
