Part of the sommelier team at the El Bulli restaurant from 2000 to 2011, Ferran Centelles continues his association with the El Bulli Foundation as the director of beverages, where he oversees the Wine Sapiens project, the largest encyclopedia of wine within the context of gastronomy. Guest editor Ferran Adrià called on Centelles to be a leading contributor for Issue 16 of the magazine, working closely with the Club O team.
