With its spicy, creamy nose, this has Burgundian heft; some sappy, snapped twig on the nose, bright and fresh, then real power on the palate with concentrated guava, custard apple, good ripe acidity, lovely texture on this and great length. This is one of DDO’s coolest, later-ripening sites. Full malolactic is done in tank. Veronique Drouhin says they have tried native yeasts but “the ferment is too slow”.
