The Pedro Ximénez is the rarest of the lot – drawn from one of just two casks. It’s glass-stainingly dark and viscous, with flavours of beef tea, black treacle, fish oil, coffee, liquorice and raisins. Despite the high levels of sweetness (300g-350g residual sugar) the balance is so precise that the wine doesn’t feel in the slightest bit cloying.
