Across the globe, hotel bars are opening in droves but they have to serve special drinks to be recognised as standalone ventures and attract people in off the street. In this month’s round up, we take a look at the hottest new bars that are opening in time for summer, with several hotel bars making the list.
Barcelona’s Kyara represents arguably the most exciting new haunt to open its doors this month, and with many festival-goers heading to the city this June, it should be the perfect spot to get away from the crowds. Meanwhile, there’s a bar that was recently opened by Champagne Taittinger at Bath’s Royal Crescent Hotel, one that invites guests and the public to soak in the pastoral surrounds of the hotel’s gardens whilst savouring a crisp glass of Champagne.

Kyara
Barcelona, Spain
Inspired by the concept of a perfumery, Barcelona’s newest bar, Kyara, offers guests a personalised experience where they can build their own Martini. At the centre of this chic new spot is a Compounding Room, hosting a library of distillates, extracts and more. It also houses Kyara’s aformentioned ‘Martini Diagnosis’, a personalised Martini experience offering an alternative way to enjoy this in vogue cocktail. If personalisation isn’t what you’re after, Kyara’s menu is impressive, with a series of cocktails all divided according to flavour and scent profiles, which get as specific as leather, chypre and amber. Mouthwatering examples include the Walnut Leather Negroni – Armagnac, Campari, vermouth, black walnut and leather accord – and the Patchouli + Rose Highball, consisting of Pentire Seaward, lime, bergamot, rose, labdanum and patchouli soda. Spearheaded by Monica Berg and Alex Kratena of London’s award-winning Tayēr + Elementary, Kyara represents the duo’s first foray into the Barcelona hospitality scene. We already know it is going to be excellent.

The Morris

It’s always an excellent sign when a drinking establishment has the scope to cater for different moods, and Manchester’s The Morris, does just that. A good old-fashioned local on the bottom floor transforms into a kitschy 80s drinking den on the top, serving a range of artisanal cocktails plucked from the mind of hospitality stalwart Dan Berger – owner of Top 50 Cocktail Bar, Blinker. Gems include the Ki No Bi Gin made from cherry blossom vermouth, umeshu and clarified plum, plucked straight from a menu that focuses on high quality cocktails crafted with precision. Not to your taste? Head downstairs to sample a vast selection of local beers from Track, Cloudwater, Manchester Union and more.

Hidden Grooves
London, UK
As the listening bar scene in London continues to grow, more spots are having to prove their mettle in order to stand out from the rest. Amongst these is Hidden Grooves, the new bar at Shoreditch’s Virgin Hotel. Think sumptuous mid-century décor, vinyl records, nibbles and zingy cocktails that really cut through the laid-backed vibe. Favourites to try include the Punk Punch – a clarified milk punch that includes touches of dried mango and spicy chilli in an unusual twist on the Spicy Margarita – and the Harmony – a non-alcoholic elixir made with Everleaf Forest and Dandy Smoke (two 0% spirits that are soon to shake up the market). Each alcoholic cocktail is paired with a record from Virgin Music’s archive, which does feel a little twee considering how stylish the bar is. However, the drinks menu is fun and the atmosphere is great, making this the perfect spot to grab a couple of drinks before spilling out onto the streets of Shoreditch.

Taittinger Terrace

Sun on your back, Champagne in hand, jazz playing in the courtyard; there’s no better way to spend a lazy afternoon, and, as summer arrives, the Taittinger Terrace at Bath’s Royal Crescent hotel promises to be a haven. The dreamy partnership between Champagne Taittinger and Bath’s two-Michelin-key hotel will be serving plenty of the good stuff alongside a selection of seasonal dishes and small plates throughout the day. For those hoping to soak up the long summer’s evenings, the Royal Crescent Hotel has curated a seasonal events programme that includes live jazz music and late night DJ sets for you to enjoy whilst sipping your fizz.

Advocatuur
Amsterdam, Netherlands
Directly translated as ‘profession of law’ in Dutch, Amsterdam’s Advocatuur was once the location of the town’s Palace of Justice. Fast forward a few decades and today the jury consists of lovers of good drinks, who have all convened around a glass or two. Headed up by Yann Bouvignies of London’s Scarfes Bar, the drinks menu is both decadent and extensive, with a long list of premium Champagnes and wines from across Europe. Wines from Krug, Dom Pérignon, Domaine de Chevalier, and Castiglion del Bosco feature. With its own on-site distillery, the bar makes its own jenever, PrØvo. Former master distiller of Kyoto Distillery, Alex Davies, will be adding his own spin, using the botanicals of pink grapefruit, ginger, tulsi and more. With an encyclopedic drinks list and sumptuous interiors, this stylish destination is the perfect spot to sip a cocktail or two, and their creative (and lengthy) menu certainly doesn’t disappoint. All named as if they were scenes in a legal drama, cocktails include J’Accuse – The Macallan 12yo, oxidised barley, nori verjus and kalamata chocolate – and Mercy – Hendrick’s, kiwi & chinotto and fig leaf distillate. Located in Amsterdam’s Rosewood Hotel, Advocatuur is open to all.

KURO Late
London, UK
Following the huge popularity of KURO’s many outposts across London, its Notting Hill flagship, KURO Coffee, will be transforming into an evening spot on Thursdays only called KURO Late, giving people the chance to sample a trendy selection of wines alongside nibbles. This buzzing spot promises to burst out onto the street, providing that summery, European vibe that London needs as the nights extend. The drinks list is succinct, including house favourites from Top Cuvée, a Vigna Rosa Lambrusco, as well as an Espresso Martini made with KURO’s own coffee. With KURO Bagels and Bakery just around the corner, this is the perfect place to start an evening before heading down the road and grabbing a light bite.
