One of the hottest openings on people’s lips this month is Paradiso Ibiza, which has opened its doors at none other than the Pacha Hotel with the intention of quenching the thirst of its guests before they depart to continue the party. For those staying in the UK, many new haunts have decided to bring the sunshine to us, with London’s Little Fires and Glasgow’s SíSí adding a touch of South American soul to England and Scotland. Little Fires

It’s difficult to write a round up of new bars these days without featuring a hi-fi bar on the list and it’s clear that the concept is here to stay. However, the newest addition to Shoreditch’s plethora of outstanding and eclectic venues, Little Fires, is doing something a little different. Taking its cues from the bars of Oaxaca, Little Fires is more than just a listening bar, it’s a mezcal bar too. Lined with varnished oak and filled with stylish mid-century furniture, it’s easy to imagine a group of men in the 1950s lounging around smoking pipes but in the present day the smokiness of Little Fires comes from its mezcal cocktails, with the clientele leaning away from the stuffy gentleman’s club and buzzing with the welcoming and cheerful vibe of Shoreditch revellers. It’s a concept where mezcal, food, and craftsmanship all come together.
Working in tandem with the kitchen, the bar uses ingredients traditionally found in Mexican dishes, such as the spices and chillies that usually make mole. Standouts include the Corn Colada, made from Tequila, corn syrup, Coco Lopez, pineapple and lime juice; and the Espresso Café mixed with mezcal, Briottet Cacao Liqueur, cinnamon syrup and Solo Coffee concentrate.
Alongside the extensive and creative cocktail offering is a kitchen serving a range of snacks inspired by the Oaxacan region. Think Brochetas de Callo Zarandeado, scallop skewers marinated in costeño chilli adobo, and Molotes de Plátano, plantain croquettes filled with aged cheese – our mouths are watering just thinking about it.

SíSí
Glasgow, UK
Another new bar this August taking its cues from South American culture is SíSí in Glasgow, which occupies the rooftop spot at Scotland’s brand new The Social Hub. It’s of absolutely no secret that Glasgow is teeming with some of the hottest bars, restaurants and clubs but with exciting menus, an immaculately curated atmosphere, and the opportunity to fill up on food and drink from early afternoon to late at night, all whilst looking out over Glasgow’s rooftops, SíSí promises to be a (metaphorical and geographical) cut above the rest.
Start off with a Green Bloody Maria before working your way through generous helpings of fresh scallop ceviche verde and more. Whilst the bar is thematically drawn to further-flung places, the produce (both food and entertainment) will be locally sourced, with homegrown talent taking to the decks on a weekly basis. Complete with a mural designed by local tattoo artist Pelikan Barba, this sky-high bar is a welcomed addition to Glasgow’s vibrant bar scene.

Oranj 2.0
London, UK
Less of a new bar, and more of a public service announcement, the team behind Oranj are on the move and have opened up shop at a bigger and better spot in the heart of Shoreditch. Unless you’ve been completely out of the loop for the last few years, you’ve probably heard of the East London staple. It’s a natural wine bar that’s really made its mark on the city, beginning its life as a delivery service in lockdown before laying down roots in a more permanent space that hosts an ever-changing roster of international chefs, whose unique, personal menus are paired with delicious natural wines selected by Oranj’s talented team. Their new spot promises more room, so bigger groups are welcome, as well as the chance to attend more wine-focused events for those hoping to find out more about what’s going on in their glass.

Paradiso
Ibiza, Spain
It’s as if the vaulted ceiling and semi-circular bar of Paradiso Barcelona got swept up in a tornado and landed exactly within the luxurious confines of the Pacha Hotel, Ibiza. Complete with Paradiso Barcelona frontman Giacomo Gianotti, the bar’s signature interiors, and the finesse that won their Barcelona spot the title of World’s Best Bar in 2022, the Paradiso team have jetted off to Ibiza to bring a touch of Catalonian glam to the white island.
But since (said in the same voice as Judy Garland’s Dorothy) we’re not in Barcelona anymore, Gianotti will be joined by renowned bartender Andrea Freddi, who will be bringing a few new tricks to the table, with artisanal concoctions inspired by fresh Ibizan fare, and a menu that pulses to the rhythms of the pre and post party ritual. In a hotel owned by one of the most famous clubs in the world, on an island devoted to hedonism, Paradiso promises to be both fun and chic, offering residents the opportunity to either grab a cocktail en route to the party or elegantly sip at a night cap. One of the hottest new bars to open this August without question.

Gran Torino
Sydney, Australia
In the Double Bay area of Sydney nestled away down a side street exists the Margaret hospitality precinct, which hosts some of the finest spots in the city. The newest gem to add to the Margaret portfolio is Gran Torino, an Italian haven that will house a bar on its ground floor hidden beneath its 100-seater restaurant. The secret bar, Bar Torino, isn’t due to open for another month, however, Gran Torino is plugging the gap by offering all sorts of European gems in the meantime, from heady Martinis to Aperol Spritz, Negronis to Bellinis. Not after a three course meal? Bar Torino’s kitchen will be offering up a welcome selection of Italian small plates to soak up all that alcohol, and situated just a moment’s throw from the beach, it’ll feel like you’ve stepped straight out of Sicily.
