From a pioneering biodynamic winery in Stellenbosch, a bespoke sparkler produced by the ‘ancestral method’ (meaning it is bottled before it has completed the fermentation, trapping the yeasty goodness in a cloud of energising bubbles). Produced with Verdelho grapes, the result is a ‘natural’, minimal intervention wine, with a doughy, nutty nose, zingy high notes of vibrant citrus, fresh sourdough and conference pear, that tastes deliciously different.
