From an estate in Petworth, West Sussex, established little over a decade ago, Roebuck has become a standard-bearer for English bubbles. A blend of the traditional Champagne grapes – Chardonnay, Pinot Noir and Meunier – with a couple of years aged on its lees, the nose takes you straight to an English orchard: there’s gentle russet apple texture, blanched almonds and citrus shortbread, with an impressive sense of elegance and finesse. Pair this with smoked trout and creme fraîche.
