In Le Puy-Notre-Dame, a lesser-known terroir of the Saumur region that is richer in flint, Mélanie and Aymeric Hillaire have created a real collective dynamic among the area’s neo-vignerons. Their exemplary Billes de Roche is a more low intervention Chenin, ripe and fleshy, whose finish reveals its sedimentary origin.
