There’s a refined mousse, while the complex, creamy palate offers layers of dried apple fig, hazelnut and toasty brioche. The gentle oxidative style works well, being both plush and moreish. Produced by Rolling Green Hills, who make a number of successful English sparklers for supermarkets, it’s great value at £18. Serve alongside a bowl of salted cashews.
