Red wine
Shafer Vineyards, Hillside Select Cabernet Sauvignon 2001
RRP £429
A cool and long vintage. Fine nose with tar and potpourri, mint and very sweet, fresh black fruit aromas. This is layered and deep but pleasantly unassertive (though my tasting colleague Elaine Brown reckons it has oomph). The fine tannins come from small berries, which give the wine its concentration and precision. The fruit is dark, savoury and opulent.
