Red wine

Peter Michael Winery, Les Pavots 2005

RRP £132

A blend of 63% Cabernet Sauvignon, 23% Cabernet Franc, 12% Merlot and 2% Petit Verdot. Deeply opaque ruby, this wine has an incredibly aromatic nose of dried herbs and flowers reminiscent of garrigue, that aromatically compelling Provençal combination of thyme, rosemary and lavender. On the palate, powerful, powdery tannins wrap around a stunning core of cherry, plum and dried tobacco notes as aromas of dried flowers and herbs linger on the finish. As the wine moves through the mouth, the tannins tighten their squeeze on the palate but never get in the way of the beautifully textured river of flavour that is this wine. Intensely distinctive and quite exceptional, this is a tremendous bottle of wine that features significantly more Cabernet Franc than recent vintages, thanks in part to a cooler-than-usual summer, which suited the grape just fine. A very wet winter was followed by a very early, very warm spring, only to have rains return sporadically through June. The estate’s altitude and exposure protected it against the mildew that most Sonoma growers had to contend with, but the cool summer meant the vines worked harder to reach optimum ripeness before the late October rains. The end result was pretty spectacular fruit, as this wine so ably demonstrates.
