Dom Pérignon, Oenothèque, 1993

RRP £320

Remarkably youthful on the nose where toasty gunpowder meets lemon, oyster and chalk. Layer upon layer gets revealed over time. Tight and crisp on the lean, refined palate. Not one of the most impressive or expressive vintages, but it has innate finesse and seems to age slowly and gracefully. Disgorged 2005.
