Picked out by Tim Sykes on a visit to Williams & Humbert in the company of sherry supremo, Peter Dauthieu, this classic, golden bronze Amontillado made from Palomino is sweetly fragrant with all manner of candied apricot, vanilla oak and caramel swirling around, but when you taste, all that deceptive sweetness morphs into a richness of texture followed by a bone dry salted caramel finish with a smoky edge to it. Hugely impressive as a drink on its own or with chorizo or jamón ibérico.
