Chairman’s Reserve, from Saint Lucia Distillers, is famed for having some of its spirit made on a rare John Dore copper pot still. This edition uses spirit from this still, as well as from a traditional Coffey column still. The two styles were matured separately in ex-bourbon casks, then blended together and additionally matured. The nose gives cinnamon doughnuts, spiced apple turnover, Cola Cubes and vanilla cream. On the palate, orange juice, coffee and breakfast pastries, with cocoa bitterness to the back palate. A finish of apple and blackcurrant tea, with a hint of cigar tobacco. This is a rum that is sure to please.
