“I wanted a name for this wine (a non-Pinot blend that’s generally about 50% Merlot, 30% Syrah with the remainder made of Cabernet Franc – clearly a favourite of Helen’s – and Malbec) so I opened the French dictionary and “célèbre” was the first word I came across,” says Clive Paton. This is showing a bit of age with some sausage, meaty, bloody, peppery notes. It’s starting to tire a little on the palate, moving into endnotes of leather.
